Ingredients:
1- Half a kilo of minced meat (preferably with some fat content)
2- One large onion, finely chopped and drained of water (set aside the onion juice)
3- 1 tablespoon of chopped parsley
4- 1 teaspoon of meat spices (7 spices)
5- Half a teaspoon of salt
6- Half a teaspoon of black pepper
7- Half a teaspoon of paprika
8- 1 tablespoon of cornstarch
Preparation Method:
1- In a food processor, place the minced meat, onion, spices, salt, black pepper, parsley, paprika, and cornstarch. Grind the ingredients well until they are blended and form a smooth dough that can be shaped.
2- Transfer the meat mixture to a deep bowl, cover it, and leave it in the refrigerator for at least one hour to firm up during shaping.
3- Take the meat mixture out of the refrigerator and shape it into medium-sized, even fingers. While shaping, dip the fingers in the onion water to keep the kofta soft and add a great flavor.
4- Arrange the kofta in a baking dish greased with a little oil, and bake in an oven at 200°C for about half an hour, or until fully cooked and dark in color.
5- Light a piece of charcoal and place it in a piece of aluminum foil with a spoonful of oil. Put the foil over the cooked kofta and cover it to allow the kofta to absorb the grilling aroma.
6- Alternatively, the kofta can be cooked by placing it on skewers and grilling directly over charcoal.
7- Arrange the grilled kofta on a serving plate and serve with rice, bread, green salad, and tahini.

1- It is recommended to use meat with some fat content to ensure the kofta remains tender and rich in flavor.
2- A little crushed garlic can be added to the ingredients to enhance the flavor.
3- To ensure the kofta holds together and does not fall apart, it is advised to refrigerate it for an additional 15 minutes after shaping, before grilling.
