Roast Beef, or cold meat, is a dish known for its amazing taste and numerous health benefits. Roast Beef Recipe (Cold Meat)

Ingredients:

  1. 2 to 3 kilograms of Tebianco roast
  2. Salt
  3. Oil
  4. Whole black pepper
  5. Whole garlic cloves (medium-sized)
  6. Chopped celery
  7. Quartered onions
  8. Large diced carrots
  9. Ghee
  10. Aluminum foil
  11. 1 cup of water (as needed)

Preparation Method:

  1. Preparing the Meat:
    • Ask the butcher to wrap the roast with twine to maintain its cylindrical shape during cooking.
    • Pat the roast dry with paper towels to remove excess moisture.
    • Make deep holes in the meat using the tip of a knife (small-sized holes).
    • Stuff the holes with black pepper and garlic cloves.
  2. Marinating and Searing:
    • Rub the roast with salt and oil to ensure the salt sticks to the meat.
    • Prepare a rectangular baking pan with a mixture of ghee and oil.
    • Sear the roast on the stove until it gets color on all sides, sealing the pores and maintaining tenderness.
  3. Preparing for Cooking:
    • In the same pan with the ghee, add the celery, onions, and carrots.
    • Cover the roast with aluminum foil and add one cup of water (or half a cup, depending on the size and weight of the roast).
    • Place it in a preheated oven at 200°C (392°F) for 1.5 to 2 hours (depending on the weight).
  4. Checking Doneness:
    • After the cooking time, check the roast’s doneness by inserting a wooden toothpick. If the liquid that comes out is red, it needs more cooking; if it's clear, it's ready.
    • Remove the foil during the last 30 minutes to allow the roast to brown on top.
  5. Serving:
    • Let the roast cool completely, then remove the twine and slice it into thin slices.
    • It’s recommended to leave the roast in the fridge overnight to firm up before slicing.

Preparing the Brown Sauce:

  1. Making the Sauce:
    • After removing the roast and vegetables from the pan, strain the remaining liquid.
    • Place the liquid back in the pan over heat and let it thicken, adding 2 tablespoons of flour and stirring well.
    • Optionally, add one tablespoon of demi-glace powder to achieve a béchamel-like consistency.
    • Adjust salt and pepper to taste.

Notes:

1- You can use only half of the roast and keep the rest in the freezer wrapped in foil for later use, making it very economical. 2- This recipe is perfect for preparing sandwiches for children or for trips.
